Jim Solomon, The Fireplace
Through his work and dedication to environmentalism, The Fireplace is the first "Green Certified" restaurant in Boston by The Green Restaurant Association (GRA), a non-profit organization founded in 1990 that helps restaurants and its customers become more environmentally sustainable in ways that are convenient and cost effective. The Fireplace has completed several environmental steps since it first began its green certification process, including such enhancements as energy efficient lighting, pre-wash spray valve, glass, metal, cardboard and paper recycling, locally grown and organic options, no polystyrene foam, and the use of recycled paper towels.
As the restaurant industry is responsible for 30 percent of waste in the country, Jim feels it is important that restaurants do their part to make sure extra steps are taken to protect the earth. He has helped several restaurants in the Boston area "go green," including Oleana, The State Room and Upstairs on the Square, and will continue to lend his time and funds to ensure more of them sign on to help the important cause. If The Fireplace can do it, Jim feels others can certainly make the transformation and is happy to lend his time to help make it happen. Jim has been named to the Board of Directors for Boston Green Tourism.
He is also a member of The Waterworks Green Committee that works to create a "green friendly" living environment for residents of the condo complex where I live, in Chestnut Hill, Massachusetts.
